Avocado, Tomato and Onion Grilled SaladSummers bounty is still far from over and a fresh salad is a delight to the senses, crisp, sweet, tangy, scented, grilled and smokey. At least my grilled Avocado, Tomato and Onion grilled salad is, having been freshly picked and grilled to perfection, tossed with a little olive oil and balsamic vinegar – oh! and don't forget the feta cheese crumbled over the top.

This is just one of those dishes that I just had to try, it had been rolling in my head for a few weeks (and that can hurt). I think I could just eat grilled avocado everyday for the rest of my life! But the grilled onion and fresh tomato made it even better.

Ingredients

6 – Avocados

2 – Tomatoes, large

2 – Vidalia onions

olive oil

balsamic vinegar

4 oz. feta cheese, crumbled

salt

pepper

Preparation

Slice Avocado's in half, length wise and remove seed. Take your knife and carefully slice the meat into cubes without removing from the skin. Caution here as your knife will cut through the skin and into your hand, so place on a towel to stabilize it.

Peel and slice onion into 1″ slices. Liberally coat the flesh side of the avocado and both sides of the onion slices with olive oil.

Sprinkle with a pinch of salt and pepper.

Heat your grill to 450° F.

Place Avocado flesh side down and sliced onion on the grill (direct heat cooking method), cook for 4 – 5 minutes (you can turn them 90° after 3 minutes if you want those cross hatches on them).

Flip avocado and onion to cook for another 3 – 4 minutes. Timing all depends on your grill, lower temp = longer cook time.

Let cool for 30 minutes cut onion into 1 inch cubes and scoop out the avocado which was pre-cut into cubes. Cube up your tomato into 1 inch cubes and mix all three into a bowl big enough to hold all of it.

Sprinkle with some olive oil and balsamic vinegar (don't add too much!) maybe a tablespoon or two of each. A little more salt (just a bit) and extra pepper for me!

Add 4 oz. of crumbled feta cheese and toss all of it together gently. Serve with or without dinner!

Try not to eat all of it in one setting because the flavors blend together so well that it will be even better the next day!
