Here is another great recipe from my friends over at Klondike Brands! One of my favorite Tailgate Recipes with just the right amount of crunch and spicy kick to it. Perfect as a single dish by itself of served with your favorite Tailgate recipe! Klondike Rose Potatoes are simply delicious when cooked this way!

Chipotle Potato Stacks Ingredients:

4 medium Klondike Rose® potatoes, sliced on mandolin
2 tbsp. olive oil
1/2 tsp. salt
1 whole Chipotle Pepper packed in Adobo sauce
2 tsp. Adobo sauce
1 clove garlic
1 tbsp. grated lime zest
1 tbsp. fresh lime juice
2 tbsp. fresh chopped cilantro

Chipotle Potato Stackers | Tailgating Recipe

One of my favorite Tailgate Recipes with just the right amount of crunch and spicy kick to it. Perfect as a single dish by itself of served with your favorite Tailgate recipe! Klondike Rose Potatoes are simply delicious when cooked this way!
Ingredients
  • 4 medium Klondike Rose® potatoes, sliced on mandolin
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • 1 whole Chipotle Pepper packed in Adobo sauce
  • 2 tsp. Adobo sauce
  • 1 clove garlic
  • 1 tbsp. grated lime zest
  • 1 tbsp. fresh lime juice
  • 2 tbsp. fresh chopped cilantro
Instructions
  1. Slice potatoes thinly and soak them in water to prevent browning.
  2. Preheat the grill with the kettle pizza accessory to a temperature of 325 F to 350 F.
  3. Spread the potato slices over the pizza pan lined with aluminum foil.
  4. Drizzle olive oil and season with salt.
  5. Stack two to 3 slices over each other.
  6. Place it in the grill and let it cook for about 45 minutes.
  7. Meanwhile, prepare a sauce by mixing together adobo sauce, chipotle peppers, lime zest, lime juice and cilantro.
  8. Set aside.
  9. When the potatoes are done, place one stack over the serving dish.
  10. Spread the sauce and layer with another stack.
  11. Spread some more sauce on top.
  12. Garnish with cilantro.
  13. Place some lemon wedges on the side and serve.

Presenter: Hey, everyone, today we’re grilling up some chipotle potato stacks on the Cooking Everything Outdoors show.

Presenter: So you know I’m always on the hunt for something special for game day and I think I’ve found a really good one from my friends over at Klondike Brands, their chipotle potato stack’s going to be perfect for serving up on game day when my friends come over.
And we’re going to be doing that on our Weber kettle with the KettlePizza accessory, super easy bake dish you’re going to love it.
To get started with this recipe you’re going to need 4 Klondike Rose potatoes and some salt, I’m using kosher and some olive oil.
That’s it, to start with.
Now what we need to do first is slice our potatoes.
And we want to slice them very thinly.
Mandolin would work perfect for this.
I don’t have one.
So I have my chef knife and we’re just going to take as best we can and make very thin slices.
With the sharp knife, that’s really easy to do.
I also have a bowl of water setting aside so I can put my skins or my potato slices in there so they don’t brown up as slice them.
Now I’ve already sliced up a couple of my potatoes.
I’m using a real nice 12 inch pizza pan right here that I put a little bit of aluminum foil on.
This is grilling foil, so it has a nonstick side.
And what I want to do is dry up my slices a little bit.
And I’m going to put my slices out and keep them as close to what they originally were as possible.
Makes them stack a little bit better and I’ll show you what I’m going to do right here.
After I have several spread out, I’m going to take my olive oil and I want to lightly coat each one.
Sprinkle a little salt.
And then we’re going to flip them over real quick.
Do the same thing on the other side.
So once we’ve done that, we want to restack our slices, in a little piles of 2 to 3 and just try to keep them as close to what they originally were as possible.
And so we’ll just stack them somewhat loosely, doesn’t have to be perfect on there.
If you want to go for, you can.
And then take the other slices and just keep building up our layers until we fill our whole pan up.
These are all finished slicing, I’ve oiled them and salted them.
I’ve got them stacked in my little layers here and now we’re going to put them in the KettlePizza accessory.
And my grill is about 425, so anywhere between a range of 350-425 is great.
Little bit through the higher side is what I found works best because basically we’re going to cook these like potato chips, about deep frying them.
So we’re just going to put these into our Kettle.
And it’s probably going to take 35-40 minutes or so, so keep an eye on them because you don’t want to burn them.
Our potato stacks are cooking away, just can hear the sizzling pop over there.
It’s really smells great, looks good.
So what I want to do is make my sauce for this, my chipotle sauce.
What I have here is a chili pepper that was packed in Adobo sauce that I’ve just chopped up fairly small.
And then I have about 2 teaspoons of the Adobo sauce.
1 minced garlic clove.
1 tablespoon of lime zest.
1 tablespoon of fresh lime juice.
We want about a teaspoon of olive oil in there.
And then a good couple tablespoons of cilantro.
We’re going to mix that up.
And what we’re going to do with this is drizzle a little bit over each potato stack.
So we’ve been baking our chipotle potato stacks for 45 minutes now.
And they’re nice little crispy on the outside, nice and soft and tender on the inside.
They’re just where I want them.
Look at those!
So now we want to stack our stacks.
And we’re going to sprinkle a little bit of our chipotle sauce on that.
And then we’ll take and put another layer right on top.
And there you go, that’s our Klondike Brands chipotle potato stack recipe.
You know whether you’re tailgating, home-gating or just party-gating, this one is a knockout.
Crispy on the top, soft in the middle.
The Adobo sauce is just really pungent.
Fire up the grill and try yourself some chipotle potato stackers because these are good.
