Mountain Man Frittata

This is my version of the Italian classic Frittata recipe prepared and baked outdoors! I used a 10" Camp Chef cast iron pie pan and the Camp Chef Camp oven.
Ingredients
  • 8 eggs, mixed
  • 4 sausage links cut into ¼ slices
  • 2 green onions, sliced
  • ¼ yellow onion, diced (about ½ cup)
  • 1½ cups sliced mushrooms
  • ½ ea Red, Yellow and Orange Bell pepper, sliced
  • ¾ cup crumbled Feta cheese
  • ½ cup blended Asiago, Parmesan and Romano cheeses
  • ½ tsp garlic salt
  • ½ tsp fresh ground black pepper
  • 1 tsp dried parsley
  • 1½ cups fresh spinach leaves
Instructions
  1. Pre-heat your cast iron pie pan or skillet on top burner of Camp Chef Camp oven medium heat.
  2. Pre-heat oven to 350F
  3. Saute` sausage till halfway cooked.
  4. Add yellow onions and bell peppers, saute for a minute more.
  5. Add mushrooms, then turn off the heat and finish cooking with residual heat.
  6. Allow to cool down.
  7. Add remaining ingredients (green onions, feta, Asiago, Parmesan, Romano cheeses, garlic salt, pepper, parsley and spinach leaves) mix gently.
  8. Once sausage mixture has cooled, fold into egg mixture.
  9. Pour back into cast iron pie pan.
  10. Bake at 350F for 40 minutes or until center is firm when touched.
