Grilled Blueberry Shortcake

Perfect for the 4th of July or any day!

Sweet grilled pound cake, drizzled with homemade blueberry sauce, fresh blueberries and topped with French Vanilla whipping cream.

Blueberry sauce ingredients

2 c fresh blueberries
1/2 c sugar
1 tbs fresh squeezed orange juice
1 tsp vanilla extract

Hey, everybody, today we’re making Grilled Blueberry Shortcake on the Cooking Everything Outdoors show.

Now, the first thing we have to do is get our blueberry sauce made.
To accomplish this I’m going to be using the Camp Chef Somerset Stove and a 10-inch cast iron skillet.
For our blueberry sauce we’ll need 2 cups of fresh blueberries, 1 1/2 a cup of sugar, 1 tablespoon of fresh squeezed orange juice, 1 teaspoon of vanilla extract and some corn starch if needed.
Take your skillet and start preheating it.
I have mine set on medium.
Now, let’s add our blueberries, sugar, orange juice.
What we’re going to do is we’re going to melt our sugar.
Soften our blueberries.
And then we’re going to mash them up.
So, after a few minutes when your berry start breaking down, you can make a decision at this point to either take and mash them up further, which you can certainly use a potato masher and do that but I want some thickness and consistency to mine.
Big surprise there, right?
So I’m going to leave it just like that.
I want to be able to see the berries in my sauce.
Now, I want to add my vanilla extract, has the final touch.
Get that mixed really good.
Now, if this isn’t thicken up for you and it will thicken up as it cools, this is where you could add some corn starch.
Be a matter of adding some into there.
You can make it slower if you want it also.
But it doesn’t take much.
I had that just where I want it.
Time to pull it off and let it set.
And we’re going to let that cool.
Now, we’re going to prepare our shortcake.
Now, you can make traditional shortcake if you want, and I probably should, but I’m not going to.
I really like mine with pound cake but I’m going to grill the pound cake.
And I’ll show you how easy that it is to do.
It adds a nice little caramelization to the surface of the pound cake and it’s really just top-notch.
So I encouraged you to give this a try.
I have here a simple loaf of pound cake that I picked up and it’s even easier to make than it is to drive to the store.
But I know a lot of you aren’t going to make it.
So what I’m looking for are pretty good 3 1/3 inch slices here.
Once you’ve sliced up your pound cake, you need to melt some butter.
So what I have here is a stick of butter.
I just want to melt that up completely.
Now, we want to grill our pound cake.
This will go pretty quick.
Take a single piece, dip it in your butter, both sides, put it on your preheated grill box.
And I oil this nicely.
Now, we’re going to get some grill marks.
Now, you see how quick that grilled up.
And these are just beautiful, fantastic grill marks on there.
That’s from the butter in the preheated grill.
Let’s put this together and I’ll show you what one of these looks like.
Now, I’m using some cheddar whipped cream.
I highly recommend you make your own.
Throughout in the boonies it’s not likely to happen.
But I have some real nice French vanilla whipping cream here.
A few fresh blueberries.
Take some of our yummy blueberry sauce.
Trills that on there.
Round the sides.
Little bit more whipping cream.
And because you’re watching this on the 4th of July, we’re just going to top it off a little bit more.
So it’s as simple as that, grilled blueberry shortcake on the Camp Chef Somerset Stove with the barbecue box attachment.
