Grilled Potato Salad Recipe

Another fabulous grilled side dish recipe from my friends over at Klondike Brands Potatoes.

Taking potato salad in a new direction by grilling the potato salad just before serving.

This recipe has great flavors that will please every potato salad aficionado!

Grilled Potato Salad Ingredients:

One bag of Klondike Medley potatoes, scrubbed and quartered.
¼ cup mayonnaise
1 tbsp. brown mustard
¼ cup green onions, chopped
1/3 cup bacon, cooked and crumbled
¼ tsp. cayenne pepper
Salt and pepper to taste

Hey, everyone, today it’s the perfect side dish, Grilled Potato Salad, on the Cooking Everything Outdoors show.

So once again I have teamed up with my friends at Klondike Brands and we’re going to be using their Klondike Rose red potatoes which you’ve seen me used previously.
And also I’m going to be using their Klondike Gold Dust to make this potato salad.
And the first thing we need to do is get these cubed up or chunked up and al dente boiled, if that’s possible, is it boiled out al dente?
You know what I mean.
We got to do that next.
So the cooking process that we’re going to be going through today is I’m going to chunk the potatoes, then I’m going to boil until they are al dente, then I’m going to mix them in there sauce, if you will, and then I’m going to grill it on the Somerset Patio Stove here with the grill box.
Now what I have here is just about 2 pounds of potatoes, the Klondike Rose and the Klondike Gold Dust.
And keep in mind that we’re going to want bite size pieces but we’re also going to want to be able to get these on the grill so they don’t fall through your grate.
Our water is boiling.
Let’s get the potatoes in there.
So we’re going to bring this up to a boil again and boil until they are al dente or to the tooth.
We don’t want them soggy or soft, so they need to hold their shape.
Now we’ll let this cool.
And while these are cooling we’re going to start the bacon.
And I picked up some black peppered bacon from my butcher shop.
I’m going be using my 11 inch ribbed cast iron skillet.
So I only need about a 1/3 cup of this.
So our bacon is done.
That’s just beautiful.
The next step is to put our ingredients together.
And what that’s going to be is a 1/4 cup of mayonnaise.
1/4 cup of green onion.
1/4 teaspoon cayenne pepper.
Tablespoon of brown mustard.
And 1/8 of a teaspoon each of salt and pepper.
And we still have the bacon we’re going to save for later.
Now what we want to do is very carefully coat our potatoes, not breaking them all apart.
Just fold this all together very carefully.
I have my grill box preheated to 350 degrees.
Very carefully put these on the grill grate.
And we’ll grill them for about a minute and a half each side-ish because there’s multiple sides.
So, after 3 to 4 minutes you’ve got some nice grill marks on your potatoes.
Our Grilled Potato Salad is done.
The bacon bits have been added to this.
You can smell the spicy brown mustard.
The cayenne is coming through really nice.
The grill marks have turned out beautifully.
Smells delicious.
Hmm, taste delicious.
You can serve this either hot or cold, it’s your choice, or warm.
But give it a try.
Makes a great side, a compliment to any dish that you’re grilling in your backyard.
