Cast iron can go rancid, especially with Dutch ovens.
No matter what you use, Crisco, canola oil, olive oil, spray oil, or even bear fat, it can go rancid.
The best way I have found to remove rancidity from a Dutch oven is to fill it with water.
Bring it to a boil.
Add one cup of white vinegar.
Cover and boil for 30 minutes.
Carefully remove the Dutch oven from the burner, pour the water out and completely dry your Dutch oven.
Reseason with your favorite coating lightly while it’s still warm.
That’s how you get the stink out of the cast iron.
